Lemon Honey Goat Cheese Chicken

I’m always trying to reinvent chicken dishes in my kitchen. Chicken is easy to prepare and my recipes tend to go over really well with the whole family. Cheese is another ingredient that tends to be very family friendly, especially in our household, so I usually add a little bit of cheese to whatever I’m cooking to please their tastebuds. I’m a big fan of goat cheese specifically, especially since it’s one of the lighter caloric cheeses, and I’ve been known to served it with sun dried tomatoes and chicken a time or two. So when I noticed another blogger friend posting pictures on her instagram of honey goat cheese (truly yummy by itself or with fruit) with her dinner selections, I took note and thought I’d try to use it to create something a little different for a change. The finished product was surprisingly delicious, so you know I just had to share it with you.

Ingredients

Instructions
  1. Preheat oven to 400 degrees, in saute pan, heat oil over medium high heat
  2. Whisk together eggs and milk in mixing bowl to create an egg wash
  3. Combine the two breadcrumbs together in another mixing bowl
  4. Dip the chicken into the egg wash (coat both sides) then into breadcrumbs (covering the chicken) and into the sauté pan for 2-3 minutes each side, then lay them into baking dish to prep for oven.
  5. Slice the goat cheese into four (4) wheel slices - If it crumbles, just roll it together into a ball then flatten it back out again.
  6. Lay one piece of the goat cheese onto each piece of chicken
  7. In the sauté pan, turn the heat down to low and add the remaining breadcrumbs. Let the breadcrumbs brown for a couple minutes, then spoon a dollop on top of each piece of goat cheese.
  8. In a small bowl, whisk together the melted butter, agave (or honey) and lemon zest. Drizzle over the top of the bread crumbs.
  9. Bake until chicken is cooked throughout (about 15-20 minutes). Serve and enjoy!

  1. MMM! That looks so tasty! I love chicken and cheese together! There was a really good honey that would be perfect for this that I saw in Savannah this past weekend! And also, yippee, your website is loading normally now! 😀

    1. I just discovered honey goat cheese a few weeks ago through an instagram post. It looked tasty, so I had to buy it when I found it at my grocery store.
